Christmassy mini-muffins


It's beginning to feel a bit like Christmas...  These mini-muffins are full of Christmas flavours of dark chocolate, dried cranberries, rum-and-raisin mincemeat and cinnamon.  Delicious with coffee (try dunking them!)

Ingredients
300g self-raising flour
200g caster sugar
1 tsp cinnamon
2 eggs
150ml sunflower oil
150ml milk
200g dark chocolate, chopped
3 tbsp mincemeat (I used rum and raisin)
150g dried cranberries

Method
  1. Preheat the oven to 180°C.  Place 42 mini-muffin cases in tins.
  2. Sieve the flour into a large mixing bowl and add the sugar and cinnamon.  Mix well and make a well in the centre.
  3. In a separate bowl, add the eggs, oil and milk and beat well.
  4. Pour the egg mixture into the flour and beat to combine. 
  5. Add the mince meat, dark chocolate and cranberries and stir well to combine.
  6. Carefully spoon the mixture into the muffin cases and bake for 20 minutes or until golden brown.
