It's beginning to feel a bit like Christmas... These mini-muffins are full of Christmas flavours of dark chocolate, dried cranberries, rum-and-raisin mincemeat and cinnamon. Delicious with coffee (try dunking them!)
Ingredients
300g self-raising flour
200g caster sugar
1 tsp cinnamon
2 eggs
150ml sunflower oil
150ml milk
200g dark chocolate, chopped
3 tbsp mincemeat (I used rum and raisin)
150g dried cranberries
Method
- Preheat the oven to 180°C. Place 42 mini-muffin cases in tins.
- Sieve the flour into a large mixing bowl and add the sugar and cinnamon. Mix well and make a well in the centre.
- In a separate bowl, add the eggs, oil and milk and beat well.
- Pour the egg mixture into the flour and beat to combine.
- Add the mince meat, dark chocolate and cranberries and stir well to combine.
- Carefully spoon the mixture into the muffin cases and bake for 20 minutes or until golden brown.
