Another all day team meeting tomorrow - so I thought I'd make a batch of mini muffins to help us survive it! These are about the most chocolatey things I can imagine - a very chocolatey mixture plus chopped dark, milk and white chocolate. And the best bit... multi-coloured mini marshmallows! These are really quick to make and guaranteed to put smiles on faces.
2 ½ oz butter (plus extra for greasing)
10oz self-raising flour
3 ½ oz drinking chocolate powder
3oz golden caster sugar
1 ½ tsp baking powder
1 egg
300ml milk
100g milk chocolate, chopped
50g dark chocolate, chopped
50g white chocolate, chopped
50g mini marshmallows
Method
- Preheat the oven to 190°C.
- Melt the butter and use a pastry brush to grease a 24-holed mini-muffin pan.
- Sift the flour, drinking chocolate, sugar and baking powder into a large mixing bowl and mix together with a hand whisk.
- In a jug, beat the egg and milk together.
- Add the melted butter, egg and milk to the dry ingredients and beat well.
- Fold in the chopped chocolate and marshmallows with a metal spoon.
- Carefully spoon the mixture into the muffin cases and bake for 15 minutes or until a cake tester comes out clean.
- Remove to a wire rack and leave to cool in the tin completely before removing.
