I love the excuse of Easter to gorge on chocolate. This recipe is easy and indulgent - lots of chocolate and colourful goodies (cranberries, mini marshmallows) topped with Cadbury's mini eggs. These were quickly devoured!
600g milk chocolate, chopped
200g digestive biscuits, broken into bits
200g dried cranberries
200g mini marshmallows
200g Cadbury’s mini eggs
Method
- Place the chocolate in a large, heatproof bowl set over a saucepan of barely simmering water and heat until melted.
- Remove from the heat and stir in the biscuits, cranberries and marshmallows.
- Spoon the mixture into paper cases arranged in a cupcake baking tin.
- Top each one with three mini eggs.
- Transfer tins to the fridge to set.
