I recently posted a shortbread recipe I'd created with heather flowers that I'd found in the local farmers market. This morning I decided to use them again, this time with plums roasted in the oven for a few minutes with a honey caramel. I adapted the recipe from Joy the Baker's recipe for honey roasted plums with thyme. This takes just a few minutes to make and is a fantastic recipe for breakfast or for a quick dessert.
Ingredients
3oz golden caster sugar
5 tbsp honey
2oz butter
2 tbsp dried heather flowers
12 small ripe but firm plums, halved and stoned

To serve
Greek yogurt, crème fraîche or thick double cream
Whole almonds, chopped
Method
- Preheat the oven to 200°C.
- Place the sugar, honey and butter in a large ovenproof heavy-based pan and stir over a high heat until melted.
- Add the heather flowers and heat for 2 minutes, stirring constantly.
- Add the plum halves, cut side down and heat without stirring for 2 minutes.
- Turn plums over and transfer the pan to the oven.
- Roast for about 5 minutes, until the caramel is a deep brown.
- Serve in bowls with greek yogurt, crème fraîche or thick double cream, spooning the sauce from the pan over the plums and sprinkling with chopped almonds.
