Honey and heather flower roasted plums



I recently posted a shortbread recipe I'd created with heather flowers that I'd found in the local farmers market. This morning I decided to use them again, this time with plums roasted in the oven for a few minutes with a honey caramel. I adapted the recipe from Joy the Baker's recipe for honey roasted plums with thyme. This takes just a few minutes to make and is a fantastic recipe for breakfast or for a quick dessert.



Ingredients
3oz golden caster sugar
5 tbsp honey
2oz butter
2 tbsp dried heather flowers
12 small ripe but firm plums, halved and stoned

To serve
Greek yogurt, crème fraîche or thick double cream
Whole almonds, chopped

Method
  1. Preheat the oven to 200°C.
  2. Place the sugar, honey and butter in a large ovenproof heavy-based pan and stir over a high heat until melted.  
  3. Add the heather flowers and heat for 2 minutes, stirring constantly.
  4. Add the plum halves, cut side down and heat without stirring for 2 minutes.
  5. Turn plums over and transfer the pan to the oven.
  6. Roast for about 5 minutes, until the caramel is a deep brown.
  7. Serve in bowls with greek yogurt, crème fraîche or thick double cream, spooning the sauce from the pan over the plums and sprinkling with chopped almonds.
