Ginger biscuits


It's my mum's birthday today and we're giving her a very cute ginger kitten. I decided to bring her a batch of ginger biscuits, her favourites. Happy birthday mum!

Ingredients
3 oz butter
3 oz light brown sugar
4 tbsp golden syrup
1 tsp vanilla extract
6 oz self-raising flour
1 tsp baking powder
1 ½ tsp ground ginger
2 tbsp crystallised ginger, finely chopped
4 tbsp caster sugar, for rolling

Method
  1. Preheat the oven at 200°C and line a baking sheet.
  2. In a large mixing bowl, cream butter and  brown sugar until light and fluffy.
  3. Add the golden syrup and vanilla, then sift in the flour, baking powder and ginger.
  4. Mix well and then add the chopped crystallised ginger.
  5. Use your hands to knead until it forms a firm dough.
  6. Roll into balls, then roll in caster sugar.
  7. Place 3 inches apart on the baking sheet and flatten slightly.
  8. Bake for 10 minutes until golden, then leave to cool slightly on the baking sheet before removing to a wire rack to cool completely.
