It's my mum's birthday today and we're giving her a very cute ginger kitten. I decided to bring her a batch of ginger biscuits, her favourites. Happy birthday mum!
3 oz butter
3 oz light brown sugar
4 tbsp golden syrup
1 tsp vanilla extract
6 oz self-raising flour
1 tsp baking powder
1 ½ tsp ground ginger
2 tbsp crystallised ginger, finely chopped
4 tbsp caster sugar, for rolling
Method
- Preheat the oven at 200°C and line a baking sheet.
- In a large mixing bowl, cream butter and brown sugar until light and fluffy.
- Add the golden syrup and vanilla, then sift in the flour, baking powder and ginger.
- Mix well and then add the chopped crystallised ginger.
- Use your hands to knead until it forms a firm dough.
- Roll into balls, then roll in caster sugar.
- Place 3 inches apart on the baking sheet and flatten slightly.
- Bake for 10 minutes until golden, then leave to cool slightly on the baking sheet before removing to a wire rack to cool completely.
