Apricot and pistachio flapjacks

Apricot and pistachio flapjacks

These are yummy, moist flapjacks that are really quick to make.


Ingredients
4 oz butter
4 oz brown soft sugar
1 tbsp golden syrup
5 oz rolled oats
2 oz pistachio nuts, roughly chopped
4 ½ oz dried apricots, finely chopped

Method
  1. Lightly grease an 8” square baking tin and preheat the oven to 150°C.
  2. In a large saucepan, melt the butter, sugar and golden syrup together.
  3. Stir in the oats, pistachio nuts and apricots.
  4. Spread the mixture into the baking tin and bake for about 45 minutes, until golden brown. Cool for about 10 minutes before scoring into 16 squares.
