Amazing yellow courgettes from Mum's allotment |
Ingredients
4 fl oz (½ cup) vegetable
oil
10 oz sugar
2 tsp vanilla essence
8 oz self-raising flour
3 tbsp cocoa powder
1 tsp salt
8 oz courgettes, peeled and grated
2 oz walnuts, chopped
Method
- Preheat the oven to 180°C. Grease and line a 9 x 13 inch brownie tin.
- In a large bowl, whisk together the oil, sugar and vanilla.
- Sift in the flour, cocoa and salt and fold together to combine.
- Fold in the grated courgette and walnuts.
- Pour the mixture into the prepared tin and bake for 25 minutes.
- Remove the brownies from the oven and leave to cool in the tin.
- Cut into squares to serve.
