Another of my vegan, gluten-free, sugar-free, no-bake recipes for energy bars and bites created for the Allroots Yoga Festival. These ones are made with a delicious mixture of almond butter, peanut butter and agave nectar, and chock-full of seeds, nuts, raisins, rolled oats and rice flakes, then rolled in desiccated coconut.
Ingredients
1 cup rolled oats
1 cup rice flakes
½ cup raisins
½ cup sunflower seeds
½ cup pumpkin seeds
¼ cup cashews, chopped
¼ cup almonds, chopped
¼ cup walnuts, chopped
½ cup agave nectar
½ cup natural peanut butter
½ cup almond butter
4 tbsp desiccated coconut, for coating
Method
- In a large bowl, combine the oats, rice flakes, raisins, seeds and nuts, and mix thoroughly.
- Add agave nectar to the mixture and stir until well coated.
- Add the nut butters and mix until well combined.
- Form the mixture into balls about the size of a golf ball.
- Place the desiccated coconut in a shallow bowl and roll each ball in it until well coated.
- Place on a lined baking tray in the freezer for an hour or so to firm up.
