Nutty energy bites

Nutty energy bites

Another of my vegan, gluten-free, sugar-free, no-bake recipes for energy bars and bites created for the Allroots Yoga Festival. These ones are made with a delicious mixture of almond butter, peanut butter and agave nectar, and chock-full of seeds, nuts, raisins, rolled oats and rice flakes, then rolled in desiccated coconut.


Ingredients
1 cup rolled oats
1 cup rice flakes
½ cup raisins
½ cup sunflower seeds
½ cup pumpkin seeds
¼ cup cashews, chopped
¼ cup almonds, chopped
¼ cup walnuts, chopped
½ cup agave nectar
½ cup natural peanut butter
½ cup almond butter
4 tbsp desiccated coconut, for coating

Method
  1. In a large bowl, combine the oats, rice flakes, raisins, seeds and nuts, and mix thoroughly.
  2. Add agave nectar to the mixture and stir until well coated.
  3. Add the nut butters and mix until well combined.
  4. Form the mixture into balls about the size of a golf ball.
  5. Place the desiccated coconut in a shallow bowl and roll each ball in it until well coated.
  6. Place on a lined baking tray in the freezer for an hour or so to firm up.
