Simple but unbeatably delicious!
Ingredients
4 peaches, halved and stoned
50g butter
100g Amaretti biscuits, crushed
2 tbsp honey
75ml Amaretto liqueur or rum
Demerara sugar, to sprinkle
Method
- Preheat the oven to 180C and butter an overproof dish.
- Mix together the crushed amaretti biscuits, butter, honey and dash of Amaretto or rum
- Place the peaches flat-side up in the dish and spoon a dollop of the mixture onto each, then sprinkle with demerara suagr.
- Pour 50ml Amaretti and 50ml water into the bottom of the dish to make a syrup and help stop the peaches sticking.
- Bake in the oven for 10-15mins until golden. Serve with the syrup and icecream or crème fraiche.
