Dark chocolate and ginger cookies


These are brilliant for dunking or on their own - the kind of cookie that deserves to be made BIG!


Ingredients
4oz butter, softened 
4oz soft light brown sugar 
1 egg, beaten 
4oz plain flour
2oz cocoa powder 
½ tsp baking powder 
1 tsp ground ginger
A good pinch of salt 
3oz crystalised ginger, chopped 
3oz dark chocolate, chopped into chunks

Method 
  1. Pre-heat the oven to 190°C.
  2. Cream the butter and sugar until smooth and creamy.
  3. Slowly add the egg and beat until well mixed.
  4. Sift in the flour, salt, ground ginger and baking powder and beat until a smooth dough is formed.
  5. Fold in the crystalised ginger and dark chocolate chunks.
  6. Spoon blobs of the mixture on to a non-stick baking tray and flatten them slightly with a spoon, leaving space between them to spread.
  7. Bake for 8-10 mins until pale golden and slightly soft in the middle.
  8. Leave to cool on the tray then transfer on to a cooling rack.
