Amaretti baked peaches


Simple but unbeatably delicious!

Ingredients
4 peaches, halved and stoned
50g butter
100g Amaretti biscuits, crushed
2 tbsp honey
75ml Amaretto liqueur or rum
Demerara sugar, to sprinkle

Method
  1. Preheat the oven to 180C and butter an overproof dish.
  2. Mix together the crushed amaretti biscuits, butter, honey and dash of Amaretto or rum
  3. Place the peaches flat-side up in the dish and spoon a dollop of the mixture onto each, then sprinkle with demerara suagr.
  4. Pour 50ml Amaretti and 50ml water into the bottom of the dish to make a syrup and help stop the peaches sticking.
  5. Bake in the oven for 10-15mins until golden. Serve with the syrup and icecream or crème fraiche.
